Cooking is the sum of material and spiritual wealth created in the human activities in the practice of cooking and eating. It includes cooking techniques, cooking activities, cooking all kinds of food produce, dietary consumption and many other spiritual products. Chinese culinary culture has a unique national characteristics and rich Oriental charm. There are lots of cooking skills in Chinese cooking, in this passage, we will discuss some of them.

Stir-frying

Stir-frying is the one of the most fundamental cooking techniques. It requires a very hot fire, a hot pan and heat oil. According to the differences of materials, the different degrees of fire and the different heat of oil temperature, there are also different ways of stir-frying.

Cooking

As meat is the raw material, it needs to fry at a high temperature for the first time, leave some oil at the bottom of the pan, then, putting the fried material into the oil. On the other hand, as the vegetables are the essential material, the material can be fried directly, and it also can be fried after it is scalded by the boiling water.

Detonation

Detonation has the meaning of urgent, quick and strong. The time of heating is very short. Detonating is mainly used for cooking brittle, ductile materials, such as gizzard, duck liver, duck meat, pork, beef and mutton, etc.

Deep-frying

Deep-frying is a cooking technique which needs a very hot fire, much oil but no juice. There are also many different methods, like 清炸( deep-frying only), 面包渣炸 (deep-frying with bread crumbs), 油浸 (oil-immersed), etc.

Sauting

If you want to sauté something you should first hot the pan, brushing the pan with a little oil, and then putting the materials (generally it is a flat pan) into the hot pan. In general, both sides of the material need sauting so that the raw material is heated evenly, and the color will be consistent.

Pickling

Pickling is a cooking skill which needs to put the vegetables or other cooking materials into a pot, and then put the seasonings into the pot to discharge the water in it. There are lots of ways to boil food, such as 盐腌(salt pickled) and糟腌(wine pickled).

Halogening

Halogening is the skill that putting materials into the prepared marinade after the materials are washed, letting the marinade into those materials. Later, when the materials are cool, that is to say, the cold dishes are finished.
