Stirred Eggplants 拌茄子

Ingredients: 500 grams of tender eggplants, 15 grams of coriander, proper amount of garlic vinegar, sugar, sesame oil, soy sauce, monosodium glutamate, salt and Chinese prickly ash.

Recipe: Clean and peel the eggplants. Cut them into small pieces and put them into a bowl. Add some salt to the pieces and then pour some cold water into the bowl. When the color of the eggplants fades, pull the pieces out and put them in a steamer. After steamed, dry the eggplant pieces. Mince the garlic. Fetch a pan and heat it. Put some sesame oil into the pan. Put the Chinese prickly ash into the oil and pour them together into a bowl. Add the soy sauce, sugar, vinegar, salt, monosodium glutamate and garlic mince to the bowl and make it a sauce. Pour the sauce on the eggplants pieces. Clean and cut the coriander into pieces. Finally scatter the coriander pieces on the eggplants pieces.
