The concept of diet, taste and nutrition:
Western's diet tends to emphasize on science, which mostly concerns nutrition. Therefore, having good nutritional value is the highest standard in Western diet. Based on the importance of nutrition, most westerners like to eat raw vegetables, not only raw tomatoes, cucumbers, and lettuce, but also cabbage, onions, broccoli, as raw vegetables have more vitamins, which can be destroyed from cooking.

There is a Chinese saying that "food is the basis of people's lives, while taste comes first". This saying shows Chinese people's pursuit of "color, flavor, aroma, shape" of the food they cook. The five main Chinese flavors are used for delicious cooking. However, it's inevitable to destroy the food's nutrition values during the process of cooking with high temperature. So, the art of modern Chinese cooking aims at the best balance of both nutrition and taste, which is of course a kind of "Improvement on Food Culture."
