Fried Eel

Ingredients:Eels (two): 500 grams; sugar: 100 grams; tomato sauce: 50 grams; dry starch: 50 grams; yellow wine; white vinegar; salt; Chinese onion; ginger; wet starch; sesame oil; garlic spread; and oil of groundnuts: 1 kilogram.

Recipe:Remove the viscera, bones and skin from the eels, cut them into 2.5-cun slices and then into two halves for each slice; add yellow wine, salt, Chinese onion and ginger, cover them with dry starch, add tomato sauce, sugar, white vinegar and wet starch and mix water with it into sauce. Heat the wok until hot, fill it with 500 grams of oil of groundnuts, heat it to be about 80% hot, put the eels into the wok, fry them until golden, take them off the wok, leave a little oil in the wok, add the garlic spread to fry it, pour the sauce mixed before and then the sesame oil, and then pour it over the eels.
